One of the youngest master charcutiers, Luke has been Chef at Lukes! Gastronomy since 2005. His parents are called Maggie and George and founded the restaurant in 1993. Throughout the years 1997-2001, he expressed a deep interest in maths, oragami and food and the running of a restaurant, often eager to yell at his parents.In 2002 he decided that he wanted to commit himself fully to the culinary world and, over the next 4 years, immersed himself in cookbooks and food books and the Xbox (halo is the overrated) teaching himself everything he could, in addition to his parents teaching him everything they knew, as well.In 2005 he took over as executive Chef of Lukes! and, within two years, had established a solid reputation across Canada as a proponent of both Slow Food and modern food philosophies;as a rare master charcutier;and as one of the few Chefs who believes in hand making everything he serves.Many of his dishes include combinations of the old and the new;his charcuterie;and his creative desserts.
