Bariumsalze, Guanidinhydrochlorid, Thiocyanate wie Guanidiniumthiocyanat, Perchlorate) bezeichnet, die geordnete Wasserstoffbrückenbindungen in Wasser auflösen. Indem die Wasserstoffbrückenbindungen aufgebrochen werden, stören die chaotropen Substanzen die Wasserstruktur und sorgen für Unordnung (Zunahme der Entropie). Die Ursache dessen ist, dass die Bildung der zur Solvatisierung notwendigen H2O-Käfigstrukturen verhindert wird. Bei Aminosäuren vermindern sie damit hydrophobe Effekte und wirken denaturierend auf Proteine, da die treibende Kraft der Proteinfaltung die Zusammenlagerung der hydrophoben Aminosäuren im Wasser ist. |
